Another cake!

Just wanted to show another cake I made this weekend!   We sent this cake with the delivery kid and two minutes later he came back and the cake was all smashed up on the bottom.  We had to try and fix it as much as we could in 30 minutes to get it there on time, which was hard because it was covered in fondant and painted.  We got it back to looking good though, and got it to the venue on time. =]

What uuuuuup??

Hey there all.  So this weekend was graduation out here as well as Father's Day tomorrow, so it has been a very busy week. Thursday was nonstop filling and icing cakes, 7 to 5. But time flies when you're having fun. eh? =]  Friday was more decorating, which is fun.  I did a delivery Friday after work with my car. The restaurant was only 3 miles away, but it took me 40 minutes to get there!  First, I was at a standstill on the highway. Of course I had to deliver it during rush hour.  Then the gps told me the place was on the interstate. lol  So I drove around for a bit and finally found it. It was a three tier cake and I found out when I got there that it was for TEN people.  Crazy leftovers. lol  Here's the cake!

Today was so busy that I had to help in the kitchen.  I got to scale out 5 lbs of eggs and slice 10 lbs of peaches. Super fun! =]
Then I got to do a delivery in the big van, by myself.  Lots of fun!  =]

My first delivery alone!

Hola!  So on Saturday, I made a cake for a bridal shower. It was a four tier cake with sea shells cascading down the front. We didn't put any of the shells or sand on until we got to the venue, to make sure everything would be in place.  So I went on the delivery with the delivery kid(they also ordered a dessert bar) without another pastry chef.  We left the bakery, drove about 10 minutes, and then realized we didn't have the sand for the cake. So we turned around, drove back to the bakery to get the sand, and left again for the restaurant.  We were supposed to be there by 12 to set up because the party started at 1. Well, we ended up getting there at 1:10. =/  So we go in and I start puting the shells on the cake while the delivery kid sets up the dessert bar with the wedding planner.  The tables were in the same area as the guests were seated for lunch, so I had to decorate the cake with everyone glancing over to see. Nervous...lol   I finished the cake about 20 minutes later and the bride-to-be came over to see it. She said it was exactly what she wanted, so it was all good.  So that's how my first delivery by myself went!   More to come!

Externship!

Hola!  I started my externship on Thursday at Palmer's Bakery in Darien, CT. I am doing three days a week in the cake decorating room and one in the kitchen, doing the pastries for the display case.  I have only been in the decorating room so far, but am looking forward to the baking day.  I start out every morning getting cupcakes ready for the display case.  We do a chocolate cupcake with oreo buttercream, a chocolate with peanut butter buttercream, a white chocolate raspberry, a coconut and of course just plain vanilla and chocolate.  Here's a picture!

After the cupcakes are done, we start filling and crumb coating cakes for the days orders. When the crumb coats are done, they sit in the fridge for awhile then we ice ad decorate them. Most of the cakes so far have been pretty simple.  The bakery gets a couple wedding cakes a week right now, but that number will go up when wedding season starts in June.  Here are a couple of the cakes I made this week.

On Friday, they let me do a wedding cake! It turned out really nice and I hope the bride and groom liked it!  Here is is!  =]

Sorry guys

Well, it's certainly been awhile.  A lot has happened.. I graduated from culinary school on Saturday! I've still got 210 hours of an internship to complete, which I will be doing at Palmer's Bakery in Darien, CT.  There, I will be baking one day a week and icing/decorating the other three days.  It's not quite what I want to be doing with the rest of my life, but it's a great start and wonderful practice. Since I haven't posted since Mod 2 (bread) I'm puting up pictures from Mods 3 and 4. I'll be taking pictures at the bakery too, and will let y'all know how that goes. =]  After the internship, I'm planning on going down to Arizona for a bit.  New York/Connecticut has been wonderful to me but I think I'm ready for a change, something new.  Well, that's all for now..I'll let you know how my first day at my internship goes..  =]
